Why high-quality saffron isn't "more expensive" – and is often more worthwhile in the kitchen

Saffron has the reputation of being a luxury spice. Outrageously expensive, reserved only for special occasions. At first glance, a jar of saffron next to salt, pepper, or curry powder does indeed seem like something from another world.

In the kitchen, when it comes to saffron , it's not the price per gram that counts, but the price per result: color, aroma, and intensity in the dish. That's precisely why genuine, high-quality saffron can be just as affordable, or even cheaper, per dish than supposedly less expensive saffron.

The biggest misconception: price per gram instead of price per serving

You often use salt, pepper, and curry in gram quantities. Saffron, on the other hand, is measured in threads. And that's the crucial difference.

High-quality Persian saffron threads are so concentrated that just a few threads produce a strong effect. Lower-quality saffron is often old, has absorbed moisture, or is less potent. In that case, you need significantly more threads to achieve a similar effect.

In short: With poor quality, you often pay for quantity rather than effectiveness.

Why low quality requires more threads

When saffron is old (and by old I mean older than 5 years; saffron as a spice has a practically indefinite shelf life), its aroma and color deteriorate. If it has absorbed moisture, it loses its potency. If it's not processed properly, it contains more lighter colors instead of vibrant red threads. You might be familiar with the result: you add more and more, but it still doesn't turn a true golden yellow and aromatic.

With genuine, high-quality saffron, often only a small amount is needed, which you activate in a targeted way and add to the dish.

0.20 g × 2 €/g = 0.40 €

That's about 0.24 to 0.40 euros per dish.

That's the point: cheap per gram doesn't automatically mean good value per result . With good saffron, you need fewer threads and get more aroma.

Why you shouldn't buy saffron powder

If you want real saffron , buy it as Persian saffron threads .

Firstly, powder is easier to dilute; you can't see what's really in it.
Secondly, powder loses its aroma faster because its surface area is much larger.
Thirdly, you can better control the amount of thread and it will last longer if stored correctly.

Place 8 to 15 crushed saffron threads into a small glass. Pour 2 to 3 tablespoons of warm, but not boiling, water over them. Let it steep for 10 to 20 minutes.
